Improv Night

I got back from Denver about an hour ago. It's another post altogether but the short of it is that I will be back. Hopefully for business, definitely for pleasure- ideally both!

That said, I have been go go go go go go go since...well, August. But at a silly pace since Monday. I'm now exhausted but hungry and raiding the fridge. Mac&Cheese a la TKTC it is:

Fresh from O'Hare, TKTC MAC'N'CHEESE

Elbow Macaroni
1/2 tsp salt (for boiling water)
1/3 low fat sour cream
1TB butter
1/4 cup chopped yellow onion
1/4 cup chopped green onion
1/2 cup fresh spinach leaves
1/4 Sharp Cheddar Cheese
pinch of Garlic Powder
Fresh Ground Pepper to taste

Boil your noodles in salted water. Drain. Stir in butter and sour cream to coat. Add veggies and coat. Add cheese and stir until the sauce is evenly distributed then finish adding seasonings.

After mountains and meetings and brainstorms and airplanes and fun stuff and deadlines...a little comfort food for a late dinner is all I needed before bed. This used stuff already in my fridge (small miracle) and the tang of the sour cream is wildly appealing flavor-wise over milk and health-wise over cream cheese.

Not too shabby for a post-biz trip Improv Night.

hmmm... I could never warm my heart to m&c. That's the European palate: hard to please. :)

Yumm, I'm hungryyy. I've never put sour cream in my mac and cheese but might have to start. And I like that you health it up with some spinach :)

I don't eat junk food too often but sometimes...when you're really tired...and feeling a bit of the burn...it's just so good.

Denver was awesome and yes, Alexa, your flowers are still going strong over a week later...YESSS!
